{Fit Recipe Friday}
I realize what I am showing you here is super simple. I
promise I am not trying to insult anyone’s intelligence or cooking skills. I am just trying to give you an idea. On any given typical day I will eat two of these
(Open Faced Rice Cake Sandwiches) and a side salad for dinner. If I use fat free dressing I can keep my
whole dinner under 500 calories.
Whenever I make
myself a salad I always use an entire bag of salad (the 10 oz. pre-washed stuff). I put it in a huge bowl and toss it with my
dressing. Then I transfer the whole mess into a smaller bowl to eat it. The
reason I make such a huge salad is so I feel like I am eating a whole lot of
food. I ALWAYS toss my salad with my
dressing. You can make just two tablespoons
of dressing stretch very far this way and you get the flavor of dressing with
every bite. I am talking about
stretching dressing to save calories, not money, but the money savings are nice
too. Undressed lettuce is awful it makes
me feel like a completely deprived little bunny rabbit! But enough about salad
because this post is not about salad.
It is all a total
mind game with food. Like instead of
eating a tiny 1 oz. square of cheese I will buy it pre-shredded or shred it
myself so it looks like more (1 oz. of brick cheese shreds into ~ ¼ cup). And also, in the following recipe’s particular
case, instead of a 150 calorie English muffin I will eat two 35 calorie rice
cakes for a total of 70 calories. Now,
don’t get me wrong, I know it’s not the same.
I am a bread loving fool! And on my cheat days I don’t hold back! But on the days I am really trying to do
something good for my body, this works for me.
After all is said and done, and the rice cakes are consumed, my mind and
stomach quiet down and seem to be satisfied. The fat from the egg yolk and the
flavor from the Mediterranean Olive Sandwich Spread really satisfy my cravings
for something really naughty!
And, by the way, I just discovered these sandwich spreads made by Mezzetta. They are wonderful! They are packed with flavor! I use them here and there to add UN suspected flavor to my food. I did not get paid to write about them. I simply like them. I also noticed that they are not at every store I go to so you might have to look around a bit for them. I got mine at Wall Mart for under $3 per jar. Not bad considering a lot of this specialty stuff seems to go for $5 or more per jar.
Ingredients:
-1 egg
-1 rice cake (I used Quaker lightly salted)
-1 Tbsp. Mediterranean Olive Sandwich Spread
Spread sandwich spread over one rice cake. Cook egg in small
skillet (coated with a spritz of cooking spray) over medium high heat. Top rice
cake with a large egg cooked to your liking. EAT!!!
