Butter Pecan Cake Mix Donuts

 These donuts were nice because they were not overly sweet.  The frosting lent 80% of the sweetness to the recipe.  The frosting was the same frosting I used for my Dark Chocolate Gingerbread Pudding Cake . It is so simple and so rich.
 I don’t know what my deal is with baked donuts.  I guess I am trying to make something I don’t have to deep fry that will taste like a donut.  IT IS NEVER GOING TO HAPPEN! If you make a donut using cake ingredients and  bake it , it is going to be a little cake in the shape of a donut.  It will not taste like a donut, but it will be cute like one. And it will taste like a yummy cake!
Come to think of it, I don’t really want them to taste just like fried donuts.  I just want them to taste different than donut shaped cupcakes.  What would really be the ticket is if they were something similar to the consistency of a scone but a little more puffy.
I really need to go get myself a culinary arts degree! 
By the way, these impostor donuts were good.  These little cakes playing donut dress up!

Butter Pecan Cake Mix Donuts
Ingredients:
-1box Butter Pecan cake mix
-1 egg
-1/3 c. sour cream
-1/3 c. milk
-1 Tbsp. vanilla
Preheat your oven to 325° F. Coat donut pans liberally with nonstick cooking spray.  Combine all ingredients in a large mixing bowl. Using an electric mixer mix blend ingredients for about one minute.  Transfer mixture into a large Ziploc bag.  Cut off one of the corners so you can pipe the mixture into each of the donut molds. Pipe ~3 to 4 Tablespoons of the mix into each mold (My pan is a medium sized donut pan. If yours is larger or smaller adjust batter amount and cooking time accordingly.)
Bake donuts for ~ 20 minutes, or until cake pulls away slightly from the side of the pan.
 
For The Frosting:
– ¼ c. chopped, toasted pecans
-1 c. dark chocolate chips
-1 Tbsp. butter
 Place the chocolate chips in a medium sized mixing bowl. Add the butter. Microwave on high for 30 seconds, stir.  Microwave on high for another 10 to 30 seconds and stir until chocolate is completely melted. Transfer mixture into a small Ziploc bag.  Cut off one of the corners so you can pipe the mixture onto each of the donuts. When donuts are completely cool pipe chocolate mixture onto the top of each donut. Sprinkle with pecans. EAT!

  1. I have to admit, love the sinful Sundays much better than the Fit Fridays. This looks yummy and will be added to my list of trying someday when I find the motivation.
