Fried Eggs and Kale

Happy Valentine’s Day! Nothing says I love you like runny egg yolks!fried eggs and kale There’s a few things I never get tired of seeing in photos. Clouds, beaches, and runny egg yolks are three of them.fried eggs and kaleI thought about speckling this dish with pink, red, and white sprinkles for the occasion but it didn’t seem right. Plus, I feel like Valentine’s Day is sort of a kid/young adult holiday.
fried eggs and kale Ben and I were at the grocery store last night.  There were all sorts of frantic people clutching bouquets of wilting red roses, boxes of cheap chocolates, and cards that were about to be hastily scribbled on in parking lots or driveways.

An old pen will be found tucked down between seat and console (barely in reach of the fingertips). When the pen is finally retrieved the heartfelt V-day message will be jotted underneath the words already pre-printed on the card.

The dusty Bic will inevitably run out of ink half way through the message.  Tap, tap, tap, try to write, tap, tap, tap, try to write. The message will finally make its way over the ink-less scribble dents in the card-stock.  The card will be placed into its painfully temporary home.

Don’t bother to lick it, just tuck it in.fried eggs and kaleDon’t forget to have something green with your oysters, black pepper encrusted beef tenderloin smothered in a red wine reduction, followed by your mile high quadruple layer slice of dark chocolate cake!

Fried Eggs and Kale

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 15 g 1/8 cup raw pumpkin seeds (toasted)
  • 10 oz. chopped kale
  • 2 tsp. fresh minced garlic
  • 1 tsp. dried lemon peel
  • 40 dried cranberries
  • Kosher salt and pepper
  • 4 whole eggs
  • 28 g Snapea Crisps brand: Harvest Snaps

Instructions

  1. Toast the pumpkin seeds over medium high heat in a large sauté pan.
  2. When the pumpkin seeds are golden brown remove them from the pan and set them aside.
  3. Turn the heat down to medium and add the kale to the same pan.
  4. Liberally salt and pepper the kale.
  5. Sauté the kale for about 5 minutes.
  6. Add water to the pan and stir as needed so you don't burn the kale.
  7. After the kale is wilted down add the garlic, cranberries, lemon peel, and pumpkin seeds.
  8. Stir to combine and then make 4 wells in the mixture to crack the eggs into. (At this point, if you're using a pan that isn't nonstick, spray a little cooking spray into each well so your eggs won't stick.)
  9. Crack an egg into each well and sprinkle each with salt and pepper.
  10. Splash about 2 Tbsp. water into the pan and immediately cover the pan with a lid so the steam is trapped.
  11. Steam eggs for 1 to 2 minutes (until desired doneness).
  12. Serve and EAT!!!
