Mini Pumpkin Spice Cupcakes

I’ve been putting off posting this because I wanted to say something brilliant about these cupcakes.  I wanted to tell a funny, entertaining story about them. But, nothing came to me. Just that these cupcakes were good and the kiss made them fun.  Ben (my husband) hated the frosting.  I think he just hates frosting that isn’t homemade.  He ate them without it.  I know these were good because even Will (my picky baby) loved them. And, there were no leftovers.  No cupcakes for breakfast the next day.
Maybe someday I will learn/know enough about the chemistry of baking that I will be able to scratch bake items and have them turn out just as good as these did.
I did not see many recipes around the web featuring these kisses, but I did see three that looked simply amazing:

Mini Pumpkin Spice Cupcakes
-1 box spice cake mix
-1 c. canned pumpkin
-3 eggs
– ¼ c. butter (slightly melted or room temperature)
-1 bag Pumpkin Spice Hershey Kisses (frozen)
-1 container (store bought, or make your own) cream cheese frosting
– 1/8 tsp. pumpkin pie spice (optional, for garnish)
Preheat oven to 350° F. Combine cake mix, pumpkin, eggs, and butter in a large mixing bowl (do not follow directions on cake mix box). Beat on medium high for ~ 2 minutes, scraping the sides of the bowl to incorporate all ingredients. Use mini muffin tin and paper and/or foil cups.  Fill each mini muffin cup ½ of the way.  I used a mini cookie dough scoop and, leveled off; it was just about the perfect amount. Press a Pumpkin Spice Hershey Kiss into the batter of each cup. I tried them upside down and right side up and got the best results from the kisses when they were pointy side down.  Place in preheated oven and bake for 15 to 20 minutes.  Remove from oven and move to cooling rack.
When completely cool pipe on a dollop of frosting.  If desired, sprinkle on just a tiny bit of pumpkin pie spice for color. EAT!
Note: My kisses were already frozen because I purchased them a couple of weeks ago in hopes I would come up with something amazing to use them in.  So I never tested the recipe without frozen kisses, I don’t really know is it matters either way.
