Pollo Fundido

Every time I go to a Mexican restaurant I scan the menu for Pollo Fundido. If it’s not on the menu I look for some form of Seafood Enchiladas. Pachangas had both. I guess I was in the mood for chicken swimming in a sea of melted cheese more than I was in the mood for lobster swimming in a sea of melted cheese.

We arrived at Pachangas about fifteen minutes before closing time. Our little family is notorious for this and I always feel guilty about it because I spent nearly eight years of my life working in restaurants. So, I am aware of how annoying it can be to have people come in late. But the people at Pachangas were completely gracious and welcoming.

The server brought us the requisite chips and salsa and we dug in. The chips were warm and the salsa had a deep red color and nice flavor. I wish I was better able to record the color of that salsa because it was really interesting and beautiful.

We ordered everything, besides desert, at once. This way, the kitchen could get our order done and out and can get things cleaned up in preparation for going home. Also, we had our two and a half year old with us. Ordering everything at once makes it easy in case we need to make a quick getaway.

I ordered the Pollo Fundido and Ben ordered the Fish Tacos. For an appetizer we ordered the sampler so we could get a taste of a few different things.  For desert we had our server box up a slice of Oreo Cheesecake and a piece of Key Lime Pie.  Everything was fantastic! There were a few things that really stuck out in my mind, besides the salsa. The chicken in the Taquitos and my Pollo Fundido was super tender and juicy!  I used to believe that if you cooked chicken low and slow (until it fell apart) you could not overcook it.  This is not true, you can dry it right out and there is no return. It cannot be fixed with oil or sauce. But, the chicken at Pachangas was perfect and I was pleasantly surprised at its texture with every bite.  Another thing that struck a chord with me was the food presentation at Pachangas.  It was beautiful.  You could really tell that they care about and are proud of their food. We took our desert home with us because we were too full to eat it there.  I asked our server if the deserts were made on site.  She said that they were not.  Working in restaurants, I knew that this was pretty typical.  So it did not bother or deter me.  I did like the fact that they took the time and effort to add personnel touches to the deserts, aka: sauce, whipped cream, cookies, fruit, and spices.

Lastly, I wanted to make a note about the staff at Pachangas.  Every single member of the staff we encountered was extremely pleasant, knowledgeable, and enthusiastic! Thanks for a wonderful experience!
