The Idaho Burrito

Too often we go to a fast food Mexican restaurant, called Los Albertos, for take out. Their Idaho Burrito is sooo.. good! It consists of a huge flour tortilla filled to the brim with cheddar cheese, diced potatoes, diced ham, bacon, sausage, and scrambled eggs.  It is a real pig fest!
This restaurant is a local chain.  We usually go to the location near our house, but the other night we had to go to a particular store “Fred Meyer” so we went to the Los Albertos by that Fred Meyer. They all have a drive through, but at this particular location the drive through window looks right into the kitchen.  At first I was nervous, but then as I got a good look at the kitchen I was relieved and quite impressed at how clean and organized it was.
The window attendant took our order and I was excited at the prospect of getting to watch these burritos as they were constructed.  First, on a large, searingly hot, flat top grill the cook tossed on what looked like ~ 4-5 c. diced white potatoes.  I do not know if they were par boiled or raw. Next the flour tortillas were placed on the grill to warm. Then he added a ladle of oil from the fryer to the potatoes.  Next, he added handfuls of sausage and diced ham to the mound of potatoes.  More oil. Next he grabbed a handful of raw bacon and into the fryer it went. Oh My Goodness! At this point I am beginning to realize why these burritos taste so good.  I am also realizing that this amount of fat should not be consumed more than once a year, if that!
Bacon was then retrieved from the fryer and into the potato pile it went. 4-5 eggs were then cracked onto the grille, scrambled, then into the massive mess they went.  All the while the cook was chopping and mixing the pile.  Finally the tortillas were removed from the grill a mound of shredded cheddar cheese was placed on to the center of each.  Heaping mounds of the potato meat and egg mixture were transferred to the cheese filled tortillas and they were wrapped tightly.
The burritos were then quickly wrapped in paper bagged, and handed over.  We enjoyed every bite, but vowed to eat there less often!

    Next time get the Asada Fry Burrito. You will not be disappointed.
