It’s definitely spring in Idaho Falls, Idaho. We’ve got wind, sporadic rain, our lawns and leaves are almost completely green.  Most people have planted their gardens, fingers crossed, hoping it won’t freeze again! Our produce departments are bursting with bitter berries because they’re not quite in season. But, the stores want us to get excited for fresh produce! We buy it because it’s pretty and we’re excited for fresh berries!  But, it’s not very good so we utilize them for texture and color and mix them with with fresh produce that does taste good.

In this fresh produce interim faze, “BOWLS” are a fun way to transition into Summer culinaria! Here are a few I’m dying to try!

This Sweet Potato Chickpea Buddha Bowl. Minimalist Baker will never let you down!

This Kiss My (Seasons Changing) Bowl. Uncomplicated! Lovely!

These Surf and Turf Quinoa Bowls with Roasted Garlic. Bring on the protein!

This Quinoa Bibimbap (Korean Mixed Veggie Quinoa Bowl).  Ah, the simple beauty of a fried egg!

These Cilantro Lime Shrimp Quinoa Bowls. Fresh!

These Roasted Cauliflower and Pearl Barley Bowls with Creamy Tahini-Dill Dressing. Golden.

These Salmon Bowls with Pickled Red Onions, Roasted Sweet Potatoes and Sauteed Leeks. Flavor City!

These Sweet Chili Pork Cutlet Rice Bowls with Avocado Cream. So unique! Why can’t I be this creative?

These Black Rice Salad Bowls with Chipotle Orange Chicken, Cashews + Feta. Seriously, go to Half Baked Harvest, type bowls into the search bar. Then, prepare to be blown away!

These Chili Cheese Polenta Bowls.  Actually Jars, but who cares, I’d eat this meal out of anything really!

FITNESS

This weight and fitness transformation is pretty amazing!

Loving your body. It’s possible.

FUN

These aren’t really fun, but if they are true, Geez!!!

Now this is something I think about all the time.  It’s definitely a trap people can easily fall into.
