Fried Eggs and Kale

Ingredients

  • 15 g 1/8 cup raw pumpkin seeds (toasted)
  • 10 oz. chopped kale
  • 2 tsp. fresh minced garlic
  • 1 tsp. dried lemon peel
  • 40 dried cranberries
  • Kosher salt and pepper
  • 4 whole eggs
  • 28 g Snapea Crisps brand: Harvest Snaps

Instructions

  1. Toast the pumpkin seeds over medium high heat in a large sauté pan.
  2. When the pumpkin seeds are golden brown remove them from the pan and set them aside.
  3. Turn the heat down to medium and add the kale to the same pan.
  4. Liberally salt and pepper the kale.
  5. Sauté the kale for about 5 minutes.
  6. Add water to the pan and stir as needed so you don't burn the kale.
  7. After the kale is wilted down add the garlic, cranberries, lemon peel, and pumpkin seeds.
  8. Stir to combine and then make 4 wells in the mixture to crack the eggs into. (At this point, if you're using a pan that isn't nonstick, spray a little cooking spray into each well so your eggs won't stick.)
  9. Crack an egg into each well and sprinkle each with salt and pepper.
  10. Splash about 2 Tbsp. water into the pan and immediately cover the pan with a lid so the steam is trapped.
  11. Steam eggs for 1 to 2 minutes (until desired doneness).
  12. Serve and EAT!!!
