Bacon and Oat Breakfast Bars

Ingredients

  • 1 cup 160 g steel cut oats
  • 6 oz. Canadian-style bacon chopped into ½ inch pieces
  • ½ cup 60 g oat flour
  • ¼ cup 30 g chopped walnuts
  • 1 oz. 28 g dried apple chips
  • ½ tsp. dried orange peel
  • ½ tsp. ground coriander
  • ¼ tsp. ground clove
  • ¼ tsp. kosher salt
  • 4 egg whites
  • ¼ cup 2 fl. oz. plain cashew milk
  • ¼ cup 76 g agave

Instructions

  1. Soak steel cut oats by covering them with water in a medium sized bowl for at least 2 hours.
  2. Preheat your oven to 350°F. Line an 8” x 8” x 2” baking pan with parchment paper.
  3. Drain oats and return the drained oats to a medium sized mixing bowl.
  4. Add the Canadian Bacon, flour, nuts, dried fruit, and spice to the oats. Stir to combine.
  5. In a small mixing bowl combine the egg whites, milk, and agave. Whisk to combine.
  6. Add the egg mixture to the oat mixture. Stir to combine.
  7. Scrape mixture into your lined pan and spread out evenly.
  8. Bake bars for 30 minutes.
  9. Let bars cool in the pan for a few minutes.
  10. Lift bars from pan by grasping the edges of the parchment paper.
  11. Set bars on a cutting board.
  12. Slice bars into 4 squares or 8 triangles. EAT!!!
