Fava Bean, Green, Quinoa Salad

Ingredients

  • 160 g dried fava beans
  • 192 g dried red quinoa
  • 454 g organic spring mix salad
  • 2 Tbsp. olive oil
  • 1 Tbsp. Chianti red wine vinegar
  • 2 tsp. coarse ground Dijon mustard
  • S & P to taste
  • 28 g crumbled Gorgonzola

Instructions

  1. Cook dried fava beans according to the package directions (drain and set aside).
  2. Cook Quinoa according to the package directions (drain, if necessary, and set aside).
  3. In a large skillet wilt the greens (drain, if necessary).
  4. In the jar of a small blender or food processor combine the oil, vinegar, mustard, and S & P. Blend until emulsified.
  5. In a large mixing bowl combine the cooked beans, quinoa, and wilted greens.
  6. Pour the dressing over the mixture and toss until all ingredients are well combined and thoroughly coated.
  7. Divide salad into serving bowls.
  8. Top each salad with a little Gorgonzola. EAT!!!
