Maple Prosciutto Breakfast Salad

Prep Time 10 minutes

Ingredients

  • ¼ c. pure maple syrup
  • 2 Tbsp. extra virgin olive oil
  • ½ tsp. minced garlic
  • ¼ tsp. kosher salt
  • ¼ tsp. fresh ground black pepper
  • 20 oz. mixed greens
  • 9 thin slices of Prosciutto
  • 4 eggs fried, over easy, sunny side up

Instructions

  1. Lay slices of Prosciutto on a parchment lined cookie sheet.
  2. Broil Prosciutto on top shelf of oven.
  3. Check Prosciutto once every 60 seconds until it is crisp (but not burnt).
  4. Remove Prosciutto from oven and set aside.
  5. Place salad greens in a large mixing bowl.
  6. In the jar of a blender combine the maple syrup, olive oil, garlic, salt, pepper, and one slice of the Prosciutto (broken into pieces).
  7. Blend contents until thoroughly combined (emulsified).
  8. Pour the dressing over the greens and toss until all the leaves are thoroughly coated.
  9. Divide greens among salad plates or bowls.
  10. Top each salad with a couple of slices of crisp prosciutto and a fried egg.
  11. EAT!!!
