Apple Jack Toast

I am always trying to come up with different ways to prepare fruit because I do not like it very much but I know that it is an important group of food.  And I know it can actually be really wonderful if treated right.  Of course, you can always take the sugar and fat route to make fruit fit for consumption, but then you have sort of defeated the purpose.  Although there is definitely a time and place for white chocolate raspberry cheesecake!  For breakfast, on just an ordinary day, I thought I would take it easy on the high carb. high cal. stuff.
So this morning I took a look in the fridge and grabbed an apple and some pepper jack cheese. I was out of oatmeal so I opted for wheat toast instead.  The thought of biting into a plain granny smith this morning seemed unbearable!  Just then I had an idea. Why not saute the apple?  And my apple jack toast was born. It all worked, even the pepper jack! I thought about labeling this as an appetizer but I do not think it would hold up long.  The apples start to turn dingy too quickly.  But they did saute up just as I had imagined they would in my mind. I used just a spritz of cooking spray in the pan.

P.S. I bet that brie or even cheddar would work nicely here as well.
