Cupcakes and PB Cake

Sometimes I have baking days.  I love, love, love, and hate baked goods!  The “literal” bottom line is that they make me fat, and they do not make me feel “physically” good.  But, they do make me feel a “mentally satisfied” type of good for a few minutes.  And those few minutes are worth it!  Just not every day!  So I do allow myself the divine tastes and textures in life, just not every day of my life.
Now, I am not saying that there are not plenty of divine yet “healthful” foods.  But sometimes a person just needs a mouthful of moist, luxurious, dark chocolate cake with rich, creamy, velvety, buttery, melt in your mouth, dark (with maybe a hint of coffee or peanut butter) chocolate frosting!  And in that moment that you require something like this in your mouth, a self-proclaimed, 100 calorie pack, low calorie, fat free,  or semi-healthy substitute just will not do!  No thanks to green labeled, processed, fake sweet foods!
OK, now that I have made some sort of peace with myself about my sweet tooth, cravings, and indulgent urges, I will share with you a couple of photos and one short, but sweet, recipe.
The Peanut Butter Cake came from one of my favorite cooking magazines, “Cuisine at Home”.  It turned out just as good as it sounded and looked in the magazine.  The recipe is long and labor intensive, but worth it.  Then later I made chocolate cupcakes from a box mix.  I had store bought frosting vanilla butter cream, but Ben wanted chocolate so I whipped some up, and it turned out to be really good!  So here is that recipe.  I think I mentioned it before, but I am only going to blog my own personal recipes now.  Eventually I want to (probably just self) publish a cookbook.
Buttery Chocolate, with a Hint of PB (Frosting)
Ingredients:
-4 Tbsp. butter (softened)
-1/4 c creamy peanut butter
-1 (4oz.) dark baking chocolate bar (melted in the microwave, stirring after every 30 sec., until completely smooth)
-2 c. powdered sugar
-1/4 c. skim milk
Cream butter and peanut butter.  Beat in melted chocolate until completely combined.   Add powdered sugar to butter, peanut butter, and chocolate a little at a time until completely combined.   Add milk until desired consistency is reached.  May or may not use all milk.  Now frost ~12 cupcakes and EAT THEM!

  1. How did you get the frosting to look so pretty??? Please email me and tell me right away!!! Also, i have a dessert recipe that is delicious and rich and fairly healthy, if you like coconut and avocado pie….interested???
