Easy Cheesy Broccoli Side

I would be willing to bet that I whip a version of this super simple side dish at least twice a month. It is Ben and my favorite vegetable side dish.  It is my easy, go to, vegetable side dish for any occasion.  I change up the cheeses, depending on what I have on hand. But the cream cheese and S & P remain as constants in the dish.  To make it a meal you could add cubed ham and serve over pasta, rice, or a baked potato.

Easy Cheesy Broccoli Side

Ingredients:

-3 to 4 c. fresh chopped broccoli florets (rinsed)

-4 oz. cream cheese

– ¼ c. fresh Parmesan (shaved, grated, or shredded)
-4 Tbsp. Peppercorn Parmesan Cheese Spread
-S & P (~1 tsp. each)
Microwave plain raw broccoli on high for 5 to 6 minutes.  Add all cheese and S & P. Right before dinner is served, return broccoli and other ingredients to microwave for one more minute.  Stir and serve immediately.

    one of benton’s constant trouble is that i never make sides and it’s true. i worry too much about getting the main together that i could care less about the side. but i just might do this one. super simple and we both love broccoli. now if i could just get makinze to believe that broccoli is good.

    Sides are a pain in the rear. And I hardly ever make them unless it is something frozen I can microwave or stick in the oven (like tater tots). I think that is why we like this so much!
