Granny’s Salsa

My attempt at Granny’s Salsa.
I used mostly ripe tomatoes.

Nearly all summer, and even last week, Granny has been churning out fresh batches of salsa with ingredients plucked from her and my father’s garden.  When I typed the words, “Granny’s Salsa” the thought of them struck me as funny.  Grannies are supposed to be known for fresh baked apple pie, not their sizzling salsa! But this Granny is not your run of the mill Granny.
This Granny, my Granny, who spent a good part of her life working her but off on a rustic Idaho cattle ranch, who is incredibly worldly and brilliant at so many things!  She shoots guns, drinks beer, gambles, travels, cooks and bakes, runs my older son around to piano and tennis, keeps a garden with my dad, puts on tremendous Holiday spreads, keeps a beautiful yard, and has a remarkable lust for life (never wasting a minute of it)!  My 14 year old Sam and his Great Granny Julia are best friends! Did I mention she is on face book!  The woman is amazing and she never stops or even slows down!  When I grow up to be 83 I want her energy!
Here is her salsa recipe:
Ingredients:
-10 to 12 Roma tomatoes
-1 red pepper
-1 to 2 jalapeno peppers
-1 med. sweet onion
-1 pkg. Salsa Mix (brand pictured)
-juice of one lime
Chop all vegetables and add package of salsa mix. Stir well.  Add the juice of one lime.  Stir well again. Chill, and then stir once more before chowing down.
P.S.  You will not be able to stop eating it until it is gone.  Even if you run out of chips, you will automatically continue to eat it with a spoon.
P.P.S. Her secret is under ripe roma tomatoes (just beginning to turn red) straight from the garden in my parents back yard.  They are a tiny bit sour, and oh so unbeatable for this salsa!
