SUPER BOWL XLV CHILI (PIG FEST 2011)

Ever year, for about the last four years, I have attempted to make the perfect Chili.  I usually follow recipes I find on the internet.  The outcomes have always been pretty reputable.  I have never kept records of past years chilies, but I plan to from now on.
This year I decided to make my own chili, right from my own head!  I have been thinking about it for weeks.  I hope you like eating pig!
Ingredients:
-Extra Virgin Olive Oil
-1 Sweet Onion (diced)
-1 Anaheim Pepper (seeded and chopped)
-1 Jalapeno Pepper (seeded and chopped)
-4 tsp. Garlic (minced, roasted)
-1 Tbsp. Cumin
-1 Tbsp. Chili Powder
-26 oz. Beef Stock
-26 oz. can Whole Tomatoes (drained and purred)
-1 lb. Hot Italian Sausage
-3 lbs. Pork Chops (all bone and fat removed, and cut into ½ in. pieces.)
 -1/4 c. Flour
-1 tsp. Salt
-1tsp. Pepper
-1 lb. Ham Steak (cut into ½ in. pieces)
-1 lb. Thick Cut Bacon (microwave on high, on paper towels, for 10 min.)
Instructions:
In large stock pot, on med heat, sauté onions and peppers in olive oil until soft.  Add garlic and continue to sauté for a couple of minutes.  Add cumin and chili powder.  Deglaze pot of veggies and spices with 1/3 beef stock.  Set pot to low heat. 
 Brown, hot Italian sausage, in large cast iron pan.  Drain sausage and add to onion and pepper mixture.  Toss pork chop pieces with flour, salt, and pepper.  Brown pork chop pieces, in sausage drippings. Deglaze with 1/3 beef stock.  Add contents (cubed pork chops and beef stock) of cast iron pan to onion and pepper mixture.
Brown ham in same cast iron pan. Deglaze pan, one last time, with remaining beef stock.  Add ham and beef stock to stock pot containing onions and peppers.
Cut bacon into 1 in pieces, add to pot with meat and vegetables.  Add tomato puree to pot.  At this point, all ingredients should be in the same large stock pot.
Simmer on low heat for 1-3 hrs.  Serve with your favorite chili toppings.  I prefer shredded cheddar cheese and sour cream.  It’s really GOOD! So EAT!
