The Incredible Edible Egg

Is there a more versatile food?  OK, I realize that is a completely loaded and subjective question, but eggs are amazing. Right? A couple of weeks ago I made these super cheesy, creamy, toasty sandwiches.  They were truly a gooey, salty mess of goodness.  Atop was placed a plain fried egg (over easy).
When the yolk was broken and running all over the plate it was time to dig in.  After we ate I began to reminisce about the fried egg.  The white with its spotless smooth fluffy texture, and then the yolk its own little pouch of perfectly rich sauce just waiting to be released scooped up and devoured.
Ben and I are talking about procuring a couple of chickens this spring.

 Sandwiches:
-Good Sturdy Bread
-Pkg. (pre-made) Swiss Cheese Fondue
-Deli Black Forrest Ham
-Steamed Spinach
-Mayo
-Dijon Mustard
-Eggs

Prepare Fondue, build sandwiches: slice bread, fondue cheese spread, spinach, ham, mustard, slice bread.  Coat outside of sandwich with a thin layer of mayo, grill sandwich.  Place grilled sandwiches in roasting pan. Top each sandwich with more fondue cheese.  Broil until golden (about 2-3 min).  Top each sandwich with a fried egg over easy. Eat Up!
