The One Dish Wonder

I love, and really depend on, one dish meals. When I am at the store trying to come up with one, I try to come up with ingredients that can stand up on their own and will not get lost in the shuffle.  Also, I am going for fast and easy when I come up with these.  So here it is:

-Ham (~1/2 lb. Large Dice 1-2in.)
-Chicken Breast ( 2-3 breasts, Large dice 1-2in.)
-Spinach (Baby, 1lb.)
-Tortellini (whole wheat, fresh 12oz.)
-Edam cheese sauce (with pesto seasoning)
-Parmesan (To Top)
-Olive Oil

Instructions: Brown Chicken, in Olive Oil, in saute pan. There is no need to cook it all the way through it will finish cooking in the oven. Just a couple of minutes on each side.
Cook fresh tortellini according to package directions. Drain.
Meanwhile empty all spinach into a large mixing bowl.  Wilt in microwave for about four minutes. Remove from microwave, drain chicken, and add hot chicken and tortellini to spinach.
Brown ham in chicken pan. There is no need to cook it all the way through it will finish cooking in the oven. Just a couple of minutes on each side. Drain ham, add hot ham to spinach.  Toss spinach mixture and set aside.
Prepare your favorite Béchamel  sauce (butter, flour, milk) ,I added 1/2 pkg pesto seasoning mix at the flour stage.  When thickened to desired consistency, remove from heat and add ~12oz. Shredded Edam.
Pour cheese sauce over spinach mixture in bowl. Toss
Transfer mixture to greased 9″ x 13″ oven safe dish.  Top with Parmesan.  Bake uncovered in 350 degree oven, on middle rack for 30 min. until hot and bubbly.
Remove from oven, let rest for 5-10 min.
Spoon and Serve!
