Three Cheese Sausage Spinach and Potato Bake

Even though this week has already been really long, I still volunteered to work tomorrow and maybe Saturday as well. My goal for tonight is to get this post out and then come back here on Sunday.
 I really want to provide some healthier recipes on this blog, but they are not as fun to cook and eat.  Sugar, fat, and salt just appear more appetizing to me when I see them in photos.
That is a bad attitude!  I am going to get better at this.  Because vegetables are beautiful too!  Especially when they are submersed in butter, bacon, and cheese!  I have got to calm down on these thoughts.  May is going to be a better month.  April was just too busy for the whole family.  That rat race pace along with crappy weather all month completely stripped me of all ambition especially when it came to diet and school work.  I am ready for May!

Three Cheese Sausage Spinach and Potato Bake

Ingredients:

-12 oz. mild Italian sausage
-10 oz. frozen chopped spinach (thawed and squeezed dry)
-8 oz. cream cheese
-4 eggs
-2/3 c. whole milk
-6 frozen potato patties (raw, not pre-cooked)
-1 tsp. each S & P
-8 oz. mozzarella (shredded)
-8 oz. pepper jack (shredded)
 
Preheat your oven to 450°F. Place frozen potato patties on foil lined, greased cookie sheet.  Bake for about 15 minutes on each side, until golden brown.  Remove from oven and cookie sheet.  Set aside.
Turn oven down to 350°F. Line a 9” x 13” baking pan with foil lined parchment.  In a medium skillet brown sausage and then drain it.  In a medium bowl combine sausage, spinach, and cream cheese. Mix well.
In another medium bowl combine milk, eggs, and S & P.  Beat until well combined.
To assemble casserole:  Place potato patties in the bottom of the parchment lined baking pan.  Over the potatoes spread out all of the mozzarella. On top of the mozzarella spread out all of the sausage, spinach, and cream cheese mixture. On top of the sausage mixture evenly sprinkle ½ of the pepper jack.  Pour the egg and milk mixture over the entire casserole.  Sprinkle with remaining pepper jack. Place in the 350°F oven and bake for 40 to 50 minutes, until eggs are set.  Remove from oven and let rest for 10 minutes. Slice, scoop, and EAT!!!  Yummy with salsa, sour cream, and/or guacamole. Plain is yummy too!

  1. This looks truly amazing! Love the idea of sausage, cheese and spinach – all on top of potatoes! I would top that with an egg and have it for breakfast!
