What Lies Within (A Mini-Series) Part 2

So I decided to start with the top shelf of one of my cabinets in the second part of this mini-series. Click here to see part one of this series.  I cleared the whole thing off and now I am going through each magazine and book, page by page, looking for anything worth keeping to glean ideas from.  I cut out the magazine pages I am interested in, and make notes right on the pages of the magazines and books to let myself know what I want to get from the recipe or ideas I have about it.  I am not quite through it all but I am getting there.  It is a long process going through them, but it is fun to see what I was liking and interested in 1998, 2001, etc… compared to now.  It is also interesting to see little notes I made to myself on some of the recipes.   When I am finished with the top shelf I should end up with a small stack of pages cut from old magazines (maybe I will put them in a binder) and a couple of books.
Some of these were from the late 90s.

From my cupboard cleaning quest, here is a recipe that looked yummy and interesting:

From this recipe I adapted the following:
Grilled Blue Turkey Burgers with Garlic and Herb Cheese Spread and a Cranberry /Apricot Chutney
-1 lb. ground turkey breast
– ¼ to ½ c. panko
– 1 egg
– S & P
– ¼ to ½ c. crumbled blue cheese
– cooking spray (I used PAM)
– ½ to 1 c. dried cranberries
– ½ to 1 c. dried apricots diced
– 2 Tbsp. brown sugar
– 2 Tbsp. granulated sugar
– 2-3 c. water
– buns (I used crusty rolls from my local grocery store)
Combine turkey, panko, blue cheese, egg, and S & P.  Form into 4 patties. Spray both sides of patties with PAM.  Set aside.  Meanwhile, place dried fruit sugar and water in saucepan.  Simmer on med low heat until thick and most of the water is gone.  You may have to add water repeatedly to obtain desired (soft and spreadable) consistency of fruit.
Grill turkey burgers on high heat (I used a gas grill) for 3 to 5 min. on each side. Remove from grill, cover with foil and rest while you toast the buns, finish the chutney, and assemble the buns after toasting.
Assemble in this order: bottom bun, herb cheese spread, burger, chutney, top bun.  Eat!
OK, here is the deal.  These were pretty good but were a little lacking in a couple of areas.  Number one the burgers were dry.  Unless you can give me any tips on this I will have to research it online. Another thing, I researched chutney online, after the fact, and what I made here was not necessarily chutney and this I will improve on next time I do this.  Otherwise they were not horrible, definitely had potential!
 Watch out for more of “What Lies Within” in the future.  I may get my cook book cabinets organized yet!
